Desserts that are Guilt-Free – Fruit

Desserts that are Guilt-Free – FruitSure fruit is a great and healthy snack by itself but there’s nothing wrong with adding a little touch of creativity. Dieters everywhere will appreciate the following recipes. The next time you’re ready to serve up a cool summertime dessert, you won’t have to be the only one left out. Now you can enjoy a fruit-filled dish without thinking twice about your diet.

Probably one of the easiest fruit dessert specialties to make is the classic fruit smoothie. All you’ll need is the following ingredients: one frozen banana, peeled and sliced, one cup milk, 2-3 tablespoons honey, two cups frozen strawberries, cherries or raspberries (or all three!), ½ cup freshly squeezed orange juice and ½ cup plain or vanilla yogurt. Toss these ingredients into a blender until it forms a smooth mixture, pour into your serving glasses and enjoy! Simple!

Another super simple fruit recipe that can be tossed together at a moment’s notice is the fruit and yogurt cup. Gather one cup of mixed fruit, one single-serve cup of fruit flavored custard style low-fat yogurt, and ¼ cup granola or grape nuts. Take your serving cup and smooth one layer of your yogurt on the bottom, followed by a scoop of your mixed fruit. Next add a light layer of granola. Now repeat the entire process one to two times or until you reach the top of your serving cup.

Want to add a little heat to your fruit dessert dish? Then you’ll love this recipe for grilled fruit. To prepare your fruit skewers for your grill, you’ll need the following fruit (all halved and pitted) and ingredients:

·    3 firm and ripe red plums

·    3 firm and ripe purple/black plums

·    3 firm and ripe nectarines

·    3 tablespoons sugar

·    Nonstick spray

·    6 metal or wooden skewers

If you plan on using wooden skewers, make sure they are thick and prior to cooking with them, stick them in water for 30 minutes. Spray your grill rack with the nonstick spray and heat up your grill to medium-high heat. Take each piece of fruit and gently thread them onto the skewers, leaving the cut sides up. Lay the skewers flat and sprinkle your sugar over the cut sides of the fruit and wait about 10 minutes for the sugar to dissolve into the fruit. When your grill is ready, place your fruit skewers cut side down and grill until the fruit is heated through and the sugar is caramelized. This should take about 5 minutes. When done, place the skewers on a plate and serve.

In the mood for a delicious fruit salad? Then take these ingredients and throw them together to make your own tasty cantaloupe salad: one tablespoon honey, ½ cantaloupe, sliced into wedges, one 1-inch piece of fresh, peeled and finely grated ginger (set aside in a small bowl), and a small handful of fresh mint, with the leaves torn. Take your serving platter and arrange your pieces of cantaloupe. Next, drizzle with honey. Take your ginger and firmly press it down into the small bowl you have it contained in and tilt the bowl to one side so that the natural juices start to run out. Drizzle the ginger juice over the cantaloupe and top with your torn mint and enjoy.
