There are a variety of butternut squash: acorn, pumpkin, winter, and regular, but they all come from the same family and each has its own distinctive flavor and use in recipes. With only 63 calories and no fat, health food lovers everywhere can appreciate butternut squash. But that isn’t the only thing butternut squash is known for. Considered a vegetable but actually a fruit of the gourd food family, butternut squash is chock full of fiber, which means that just one helping is enough to satisfy your appetite and fill you up. This makes it great for those that want to practice portion control and prevent overeating. Additionally, including more butternut squash into your daily diet will provide your body with plenty of beta-carotene, B vitamins, potassium, and vitamin C.
So if you’re ready to get some butternut squash into your life, let’s get to the recipes!
Butternut Squash & Lamb – Ingredients: 1 ½ lbs of stewed lamb meat, 4 cups of peeled butternut squash (cut into one inch chunks), 1 jar of masala cooking sauce, 1 cup of frozen peas.
Take your butternut squash, ¾ cup of your masala cooking sauce, and lamb and combine together in a slow-cooker, preferably one that is about 3 ½ quarts or larger. Cover and cook on low for 8-10 hours until tender. Add in your peas and the rest of your masala cooking sauce and continue to cook on low for an additional 15 minutes. Place into bowls or plates and serve.
Butternut Squash & Apple Bake - Ingredients: 3 green apples (peeled, cored and cut into quarters), 3 ½ peeled, seeded butternut squash (cut into 1 – 1 ½ inch chunks), ¼ cup of butter, ½ teaspoon salt, ¼ teaspoon pepper, thyme leaves and apple slices for garnish.
After heating your oven to 350 degrees, line two baking sheets with nonstick foil and place one tablespoon of butter in each lined pan. Melt in the oven for one minute. After taking the pans out, add half of the squash and half of the apples into each pan and mix the two, while spreading it around in the melted butter. Bake for 40-45 minutes until tender. Be sure to toss the mixture in each pan once during this stage. Now take the apple and squash mixture and put into a bowl. Add the rest of your butter as well as the salt and pepper. Mash until you get a smooth consistency. Place onto a serving dish and add your garnish of thyme leaves and apple slices.
